Food.com promised this was a really (emphasis on the REALLY) tasty vegetarian meatless meatloaf.
It was, in reality, only…okay.
I halved the meatloaf recipe and even added more tomato sauce then called for (inside and on top toward the end of the baking) but still the lentil and oat-based meatless meatloaf was dry. The concept here is solid, it is, but adding roasted red peppers, garlic and more liquid could go a long way toward making this meatless meatloaf a staple dinner in a vegetarian household.
And not that looks are everything in life or on the table, but this meatless meatloaf didn’t delight the eyes whilst in the pan or on the plate. A slightly negative bias was developed before the first forkful passed through lips.
As it stands now, the Bear would prefer that I keep searching for other meatless meatloaf recipes to try, ones that maybe incorporate some generally-more-moist beans instead of the more pasty-tasting lentils and oats.
Got any suggestions? I’m all ears and cooking utensils!
