I’ve only met one kid who didn’t like grilled cheese but I’ve encountered just a few who enjoy eating their vegetables.
This delicious, easy to make grilled veggie grilled cheese sandwich attempts to expand the center of that youthful foodie Venn diagram by sliding ultra thin, gently grilled, tastefully seasoned, tender vegetables in between classic Land O Lakes® White Deli American on a tasty flatbread. The result is a handheld lunch that’ll make both kids and adults happy.
The Grilled Veggie Grilled Cheese Recipe
Ingredients to make the best grilled veggie grilled cheese recipe
- 1 medium yellow squash, halved long ways
- 1 medium zucchini, halved long ways
- 1 small onion, halved
- 1 jar of roasted red peppers
- 16 ¾-ounce slices of Land O Lakes® White Deli American
- 4 pieces of your favorite brand of round flatbread
- Extra Virgin Olive Oil
- Sea Salt
- Black Pepper
Makes 4 sandwiches
Fire up your grill. While the charcoal flames die down or while the temperature rises in your gas grill, brush the onion, squash and zucchini with extra virgin olive oil then sprinkle with salt and pepper. When the grill is ready put all the veggies down straight onto the grill and cook until tender but before they are blackened. After the vegetables have been grilled to your liking, remove from heat, set aside and let cool.
Using a good chef’s knife, cut the squash, zucchini, and onions into thin, almost transparent semi-circles. Set aside.
Lay out 4 pieces of flatbread and brush with olive oil then toss directly onto the still-hot grill. Leave grill lid open/off and stay with the flatbread, turning after a minute and removing from heat after thoroughly warmed but not burned.
Back inside, lay 2 slices of Land O Lakes® White Deli American down in the middle of each still-warm flatbread. Next, position the thin slices of squash, zucchini and onion with a fork full of roasted red peppers on top of the cheese. Place 2 more slices of cheese on top of the veggie mixture and fold the flatbread over in half.
*Optional: Place the grilled veggie grilled cheese back on the heat to fully melt the cheese and re-warm the flatbread and the veggies, keeping the lid open/off and carefully turning once. I say optional here because if you work quickly, it is likely that the cheese will already have started to melt against the warm flatbread and room temperature veggies might be easier and more enjoyable for your children to eat.
To serve, cut each grilled veggie grilled cheese sandwich in half and plate alongside a small mixed green salad and fresh fruit or a cup of applesauce.
I cannot go as far as to say your children will fall in love with their vegetables because of this grilled veggie grilled cheese recipe but they will love this sandwich…and that’s a start!
