Listen, I get any apprehension you might have about frozen foods: Sodium levels, yikes! Diverse ethnic selection, ummm…maybe? Fresh is better, right? Will everyone think I’m a lazy dad if I use frozen foods? I had many of the same concerns, PLUS I’m a stubborn, anti-convenience, from-scratch at-home chef, but since being asked by the fine fellas at Life of Dad to participate in the #FrozenChefMadness contest, I’ve discovered frozen food options that aren’t merely vehicles for salt delivery into my getting-healthy self AND there are tons of ethnic choices AND there are times when using some frozen foods makes total sense…like when you are rushing to prepare something delicious for your hungry friends waiting in front of your 60″ HDTV or when you are trying to bang out a healthy home cooked meal in-between your daughter’s Girl Scout meeting and the scheduled tip off time of your favorite college basketball team’s opening round tournament game.
I’m already a lover of stashing multiple bags of fresh-frozen veggies in my freezer, so I don’t have to deal with limp broccoli florets and pathetic carrots 48 hours after bringing them home from the produce aisle, but now I’ve discovered a few more frozen goodies that I can rely on in a pinch, to Let Go of some of those issues mentioned at the top of this post.
