The Perfect Birthday Dinner

Tonight for dinner, I prepared two-inch thick boneless (I prefer bone-in, but I’ll take what I can get, ya know) pork chops using a pecan and almond dry rub from Cabela’s (a great stocking stuffer from my brother) with baked potatoes along side peas & corn. I made a quick pan-sauce/reduction with red wine, butter and the yummy little bits from the bottom of the pan (oh those bits!!!)

At the table my lovely daughter said the following:

“Daddy, you are the sweetest”
and
“Daddy, you make the best dinner”
and
“Daddy, I love you”

…and she isn’t even old even to want to the car keys!

Oh, the title of this post…I turned thirty one today. ho-hum.
