As a general rule, rarely ever is it desirable to pull back the curtain on the glistening sports car or the pricey speed boat at the very beginning of a game show.

This was the opening meal, but that wasn’t the plan.

November 2017’s #LoveAmelia ManFAM press trip was forced to reschedule thanks to hurricane activity in early fall, which eventually rejiggered our itinerary and landed us squarely in the lap of culinary luxury a mere two hours after arriving on the sliver of Floridian perfection known as Amelia Island.

The show had just begun and already we’d won the sports car.

The best butternut squash soup in the world is served in Salt, the restaurant inside the Ritz-Carlton Amelia Island.

It’s a divine dish, even for gents like me who aren’t too fond of butternut’s yellow-ness and its autumnal taste and smell. This soup is executed beautifully and served even more so, with a whipped froth atop and whole cloves and spices below.

The best butternut squash soup in the world is a pleasant assault on the senses.

A Butternut Squash Soup Recipe Direct From The Ritz-Carlton Amelia Island

Best Butternut Squash Soup Recipe

Yields about: eight 10 ounce portions

3 Large Butternut Squash
1 Cup Apple Juice
2 Cups Heavy Cream
3 Cups Whole Milk
½ Teaspoon Nutmeg, ground
½ Teaspoon Clove, ground
½ Teaspoon Allspice, ground
½ Teaspoon Cinnamon
Kosher Salt – To Taste
2 Tablespoons Unsalted Butter

  • Cut the squash in half and take out the seeds. Bake the squash on a sheet pan skin side up at 350 degrees for 40-50 minutes or until soft.
  • After the squash is cooked, cool to room temperature and set aside.
  • Add the next 7 ingredients into a large pot and bring to a simmer then turn off.
  • Scoop the pulp out of the squash and add it to the liquid in the pot.
  • Stir well and bring it back to a simmer then turn the heat off.
  • In small batches add the soup to a blender and puree until smooth. Adjust the seasoning with the salt and finish with the butter. Pass through a fine meshed strainer and serve.

At Salt inside the Ritz-Carlton Amelia Island, the Butternut Squash Soup is served atop of a blend of aromatic autumn spices and with a foam atop the soup itself (see photo above).

While these glamorous presentation flourishes are not necessary to reproduce the best butternut squash soup in the known world, it sure does help.

Maybe instead of going quite that far in your own kitchen…maybe you should consider booking a stay, or at least a meal, at the Ritz-Carlton Amelia Island. You will not be disappointed with the well-paced luxury inside or out on this precious piece of Floridian wonderland.
