Not that it takes a tremendous amount of time or effort to whip up a plate of scrambled eggs or to fry one and shove it between two halves of a bagel or in between an everything-flavored Flatout Foldit for a hot breakfast sandwich on the way to school and/or work, but weekday mornings in the fall are dark, chilly stumbles around the kitchen capable, usually, of producing nothing more elaborate than a cold bowl of cereal.
And maybe a spoon, if we can find one during our sleepish fumble in the utensil drawer. Ouch, that was a fork.
Weekends, on the other hand, offer us parents a (slightly) later start, the chance to wait for the sun to rise from its own slumber and send beams of fiery orange light down to cut through the 4-panel window of the backdoor giving the illusion of warmth on the otherwise unforgiving tile floor of the kitchen, and an opportunity to put down on the breakfast table something of more substance, color and warmth for our families.
Here’s my recipe for a Flatout amazing autumn weekend morning breakfast, prepared in minutes, enjoyed by all; the embodiment of Autumn on a plate, incorporating all of the colors of the season. This breakfast pizza will bring you and your kids some much needed AM warmth when coupled with a cuddly mug of tea, cider or hot chocolate.
Autumn Weekend Morning Breakfast Pizza Recipe
*recipe is for 1 pizza. To make more, do the math (sorry, you probably thought there’d be no math involved.)
- 1 Flatout Flatbread Artisan Thin Rustic White Pizza Crust
- 2 eggs, scrambled
- 3 slices of Land O’Lakes White American
- Roasted red and yellow peppers
- Bacon and/or sausage, cooked and crumbled (optional, as in, if you also have a vegetarian in your care, skip the meats)
- Ketchup, BBQ Sauce, Sriracha, Hot Sauce or whatever ‘wet’ ingredient you and your kids would like as the base of your Flatout Flatbread Pizza(s). We’re ketchup people in the AM but I’m willing to listen to your BBQ sauce argument.
Follow the instructions on the Flatout Pizza Crusts by toasting up the flatbreads in the oven for 2 minutes at 375 degrees, then drizzle ketchup before spreading out the scrambled eggs, bacon crumbles and roasted peppers.
Finally, layer the top with the cheese slices to hold everything in place and slide back into the oven for 5 minutes. Remove, cut into squares and serve with fresh fruit.
Now, with a full belly of warm breakfast goodness, it is time to relax. How’s about crawling back into bed with a good book and a fuzzy blanket. Sounds dreamy, right?
