Happiness is a Ham & Cheese Omelette

I am a happy man. I collected a fair share of credit to Williams & Sonoma during the recent Christmas and Birthday seasons and used all of it to score a 10″ All Clad Brushed Stainless Steel Non-Stick Frying Pan. I have the entire set of All Clad LTD Stainless Steel cookware and it is a wonderful set to cook with but producing an appetizing looking fried egg, let along an omelette, with a non non-stick pan is freaking impossible. So I acquired the missing piece to my culinary puzzle this past Sunday and just tonight, I made my first omelette. A perfect 10. Diced ham, cheddar cheese and organic free range brown eggs. Light, puffy, evenly cooked and flippable! I can die now…
